This recipe has been sent in from Peter of Ipswich, we have not
tried it yet but if someone would like to try it and let us
know what they think.
Ingredients
- Trout - from the fresh fish counter - £6.00 is approx. enough
for 2 people
- Chips
- Peas
- Button mushrooms
- 1 small tub single cream
- Olive oil
- Milk
- Cornflower
- 1 oz Butter
- Fresh ground salt
- Fresh ground black pepper
- 1 bottle of Australian Chardonnay - chilled!
Method
- Rinse the trout, cut into 2 pieces & brush with olive
oil.
- Grill each side for 10 minutes.
- Prepare the chips and peas of your choice.
- Wash the mushrooms and stand stalk up on a plate.
- Pour the single cream into a jug & make up to ½ a pint with
milk.
- Melt the butter in a second large jug & add 1½ level
tablespoons of cornflower. Use a balloon whisk to mix
thoroughly.
- Add some cream & milk whisking thoroughly each time
until all is mixed.
- Put the cream in a microwave for 30 seconds [600W] or
15 seconds [900W] and stir thoroughly. Repeat until it starts to
get as thick as you like it.
- Open the wine.
- Give the cream a final 15 seconds in the microwave. Add black
pepper & a little salt and stir. More can be added if
needed!
- While arranging the fish on warmed plates give the
mushrooms 15 seconds or more in the microwave to heat. Put a cup of
cold water in at the same time.
- Pour the wine & tuck in!
