Daphne's Suffolk Rusk Recipe

Suffolk Rusks featured in the 2009 Spring Show in memory of Daphne Watson.

Ingredients

1lb (450gm) self-raising flour
2 eggs
A little milk to mix
Good pinch of salt
6oz (170gm) fat (½ lard & ½ margarine) cut into small cubes

Method

Put the flour and salt into a bowl and rub in the fat.

Beat the eggs, then add them to the mixture together with enough milk to form a smooth dough.

Roll out the dough until it is about 1” (25mm) thick, then cut into rounds with a 2–2 ½” (50 - 60mm) pastry cutter.

Grease a baking tray and lay out the rusks. Bake them at 2000C (Gas Mark 6 - 4000F) for approximately 10 minutes, until they are a light golden colour.

Remove from the oven, cut each one in half and return to the oven for 5 – 10 minutes.

When cooked, spread with butter and enjoy!

“I have to make a batch of these every week for my husband Dennis. He only married me for my rusks – and my children married just to get away from them!”

Daphne Watson (1929 – 2008)

Safer Neighbourhoods

Suffolk Police are working with Councils and other organisations to deliver a service that is visible, accessible and responsive to what local people need. This will give you a greater say in issues being concentrated on by the Police - including crime reduction and  antisocial behaviour. It will also ensure more feedback from the Police on what they are doing.

The mobile Police Station will continue to visit and the Neighbourhood Watch Scheme has been revitalised.  You can contact your Safer Neighbourhood Team on 01473 383351 or click on their web site - Safer Suffolk

To talk to the police ring Sgt 332 Peter Street on01473 613500 or email
