by Ann of Bury St Edmunds who says that this recipe will boost Bone
Health - ideal for strong bones to help and guard against
fractures. Spinach is high in calcium and Vitamin K, which is good
for bone health. Nuts contain magnesium and copper which are
important for bones. This is perfect for a starter or light lunch.
Ingredients
- 2 chicken breasts – boneless and skinless
- A little sunflower oil
- 2 teaspoons of runny honey
- 1 x 200g bag of baby spinach
- 1 x 85g bag of watercress
- 50g baby plum tomatoes - halved
- 50g walnuts – cut into quarters
- 2 teasp sesame seeds
- Olive oil and balsamic vinegar to dress
Preparation
- Slice chicken breast into thin, long strips. Season with salt
and pepper.
- Remove any long stalks from the spinach and tip into a large
salad bowl. Add the watercress and mix with your hands.
- Scatter over the tomatoes and walnuts and add salt and
pepper.
- Heat the oil in a non-stick frying pan over a high heat. Add
the chicken strips and stir fry. Pour over the honey and fry for a
further couple of minutes until the chicken is cooked through and
golden brown.
- Arrange the hot chicken over the salad. Sprinkle the sesame
seeds over the chicken and dress with little olive oil and balsamic
vinegar.
