Doris's Stuffed Monkeys

Thanks to Peter from Ipswich for this recipe he also told me the story behind it. "Doris was a London lady who supported West Ham and remembered having these when she was young, the origin of their name is however a mystery. Doris was a member of the Mothers Union / WRVS in fact if there were a ladies group she would be a member. In her late 80's she joined her local indoor bowling club & was known as Demon Doris. A player would be at the far end & tell her where they wanted the ball to be and she had an uncanny way of being exact. Unfortunately her age limited the number of games she could play each night."

Ingredients

  • 1 box of sticky dates
  • 1 pack of almond nuts
  • 1 pack of desiccated coconut

Method

  1. Rinse Hands.
  2. Remove stones from date & replace with an almond.
  3. Roll in coconut
  4. Arrange on a plate and sprinkle with more coconut.

This has to be the easiest recipe by far and no baking involved.
