Ingredients
- 6 slices stale bread
- 6 oz Mixed dried fruit
- 6 oz Suet
- 3 oz Demerara sugar
- 1 tspn Ground mixed spice
- 1 egg
Method
- Cut the crusts from the bread and soak in a bowl of water.
- Strain the bread through a sieve to remove as much water as
possible. Put the soggy bread into a bowl and beat with a
fork.
- Add the suet, egg, mixed fruit, sugar and spice and mix
thoroughly.
- Put in a bread tin or similar and bake at 180ºC or 350ºF Gas 4
for about an hour.
Tester’s comments
“I’ve never bought suet before, and eventually settled for 25%
less fat vegetable suet which is available in most
supermarkets.
The recipe was really easy although I did feel like I was
sailing into unknown waters. The original amounts were in cups – I
changed these to 6oz measures. I also reduced the suggested sugar
by half (the original recipe quoted 6oz rather than the 3oz I state
above.
The resulting pudding is very moist and heavy – quite similar to
a bread pudding. An autumn or winter dish?”
