Metfield is a small village in Mid Suffolk and was home to the
USAAF airfield of the 491st Bomb group during the Second World War.

Ingredients
- 8oz Gammon
- 8oz Lean Beef
- 1 Large Onion
- 1 Large Carrot
- 3 Sticks Celery
- 2 pints of water
- Salt and Pepper to taste
Method
- In a large saucepan, add the Beef and the Gammon, no need to
chop.
- Wash and chop the vegetables and add these to the pan.
- Cover with cold water and slowly bring to the boil.
- Turn down the heat and simmer for 2-3 hours.
- Strain off the liquid into a bowl and put the meat to one side
(this can then be used in the Meat Loaf recipe below).
- Sieve the vegetables into the liquid, season with salt and
pepper and serve hot with warm crusty bread.
