Metfield Soup

Ingredients


  • 8oz Gammon
  • 8oz Lean Beef
  • 1 Large Onion
  • 1 Large Carrot
  • 3 Sticks Celery
  • 2 pints of water
  • Salt and Pepper to taste

Method

  1. In a large saucepan, add the Beef and the Gammon, no need to chop.
  2. Wash and chop the vegetables and add these to the pan.
  3. Cover with cold water and slowly bring to the boil.
  4. Turn down the heat and simmer for 2-3 hours.
  5. Strain off the liquid into a bowl and put the meat to one side (this can then be used in the Meat Loaf recipe below).
  6. Sieve the vegetables into the liquid, season with salt and pepper and serve hot with warm crusty bread.
