Ingredients
- ½ lb Butter
- 2 teacups castor sugar
- 2 teacups flour
- 2 Level tsps Baking Powder
- 1 teacup of grated chocolate
- 4 eggs
- ¾ teacup almonds (blanched and chopped finely lengthways)
- 1 teacup strong black coffee
Method
- In a large bowl, cream together the butter and sugar.
- Sift the flour together with the baking powder.
- Add the grated chocolate to the flour and baking powder and mix
well together.
- Separate the eggs (keep the egg whites as these are needed
later) and beat the egg yolks.
- Gradually add the flour mixture to the butter and sugar,
alternating with some of the beaten egg yolk. Stir well and
continue adding until all combined and the flour and egg yolks are
all used up.
- In a clean bowl, whisk the egg whites until they form soft
peaks.
- Add the almonds, coffee and egg whites to the mixture and fold
together.
- Line a tin with greaseproof paper and bake in a moderate oven
for around 1 hour.
