Another recipe sent in and tested as the picture
shows. I tried the second variation with mushrooms but
there are two others for you to try. A very tasty, warming
meal for those cold evenings.
Ingredients
- 680g lean pork steaks or pork fillet
- 28g butter
- 1 medium onion
- 42g plain flour
- 568ml Vegetable Stock
Method
- Cut the pork into 1 inch cubes.
- Gently fry 1 sliced medium onion in butter until
tender, add the pork & brown lightly.
- Stir in the flour & cook for 1
minute.
- Remove from the heat and stir in the
stock.
- Re heat until boiling, stir for a minute &
season to taste.
- Add the remaining ingredients as per
variations below.
- Turn into a covered dish, cook in hot oven
- 355F, Mk 5 or 180C for 1 1/2 hours or until
tender.
Variation 1
At stage 4 add 400g can of tomatoes & half level teaspoon of
oregano. Garnish with 3 tbls. grated Parmesan cheese.
Variation 2
At stage 4
add some halved button mushrooms. Before serving stir in 2 tbls
brandy & 3 tbls single cream.
Variation 3
At stage 4 Use only 285ml stock & make up to 568ml with
cider. Half an hour before serving add peeled, cored sliced
eating apples.
