Rabbit Casserole

Ingredients

  • 1 rabbit cut into pieces
  • 1 small cabbage
  • 1lb of small sausages
  • 4 rashers of bacon
  • 1 small onion
  • ¼ pt stock
  • ½ pt dry cider
  • Herbs
  • Seasoning

Method

  1. Slice the cabbage and boil for five minutes in a little water, drain well.
  2. Peel and slice the onion and fry with the sausages until the sausages are brown.
  3. In a large casserole dish put the drained cabbage, rabbit, sausage, onions and uncooked bacon.
  4. Cover with the stock and cider.
  5. Add the mixed herbs and seasoning.
  6. Cover well and simmer for around 2½ hours in a very slow oven.
