
This recipe has been
sent in by Peter of Ipswich, and enjoyed by everyone in
the office with our coffee this morning! Thank you Peter, and
of course Shirley, for this recipe.
Ingredients
- 1 lemon jelly
- 100g butter
- 200g plain Greek yogurt
- 200g digestive biscuits
- 4 cleaned lemons [2 lemons will do without decorations]
- 200g low fat cream cheese
Method
- Put the biscuits into a freezer bag & crush thoroughly with
a rolling pin.
- Grease or line 8" flan dish.
- Melt the butter and stir into the biscuits.
- Press the biscuit mixture into the flan dish and put into
the fridge to set.
- Melt the jelly in a microwave with 1/4 pint of water.
- Add cold water to just under 1/2 pint. Stir and allow to
cool.
- Beat the cream cheese and yogurt until smooth, add the cooled
jelly.
- Grate the zest of 1 lemon onto a plate.
- Take the juice from that lemon + 1 other and the grated zest
and add to the cream cheese mixture. Stir well.
- Leave until starting to set.
- Pour into biscuit case to the top. Do not overfill.
- Put into the fridge to fully set.
- When fully set remove from flan dish and place on a plate.
- Decorate with lemon slices from the remaining 2 lemons
